A beautiful Colombian coffee produced by Damian Bolaños, with a super light roast designed to enhance the clarity and acidity of this highly expressive sensory profile. Using a washed process, it undergoes a two-stage fermentation: first with the whole cherry for 15 to 18 hours and, after depulping, for an additional 36 to 38 hours, before being washed and slowly dried in a solar dryer for up to 20 days.It presents a lively and precise acidity; it is a very clean coffee with a light, refreshing texture and remarkable aromatic complexity.
